About This Coffee
This is everything we love about a classic Salvadoran Bourbon. Rich milk chocolate and buttery toffee create the foundation, while a gentle red apple sweetness adds just enough brightness to keep each cup lively without becoming overly fruity. About the Farm
Located in the coffee-growing highlands of Ahuachapán in western El Salvador, San Miguel Mill has been producing and processing coffee since 1975. Today, the farms, wet mill, dry mill, and export operations all remain under the stewardship of the same family, now led by the fifth and sixth generations of coffee producers. This continuity allows the family to oversee every stage of production, from ripe cherry delivery through milling, quality control, and export.
Quality is central to the mill's operation. Every lot is monitored by a dedicated quality team that evaluates coffee throughout processing to ensure consistency before export. After harvest, the Bourbon cherries are fully washed to highlight clarity and sweetness before being carefully dried on traditional patios under the Salvadoran sun. This slower drying process helps produce the clean, chocolate-forward profile for which the mill has become known.
Ahuachapán is one of El Salvador's premier coffee regions, known for its volcanic soils, moderate elevations, and favorable climate. These growing conditions, paired with the Bourbon variety's naturally sweet character, produce coffees that emphasize balance, sweetness, and body rather than intense acidity, making them some of the country's most consistently approachable coffees.
