About This Coffee

Santo Tomas Perdido offers a softer expression of Guatemalan coffee. Sweet caramel and toasted almond create a smooth foundation while delicate pear notes add a gentle fruit character without becoming overly bright. The cup is creamy, balanced, and approachable, making it an excellent choice for drinkers who enjoy sweetness and body with only a touch of fruit.

About the Farm

Nestled along the slopes above Lake Atitlán near San Lucas Tolimán, Finca Santo Tomas Perdido has been owned and operated by the Torrebiarte family since 1996. Today, the farm is managed by third-generation producer Javier Torrebiarte, who returned to Guatemala after studying agricultural business and technology in the United States and London to continue developing the family's specialty coffee program.

The farm employs approximately 125 full-time staff throughout the year and expands to nearly 500 seasonal pickers during harvest. This experienced workforce allows coffee cherries to be selectively hand-picked at peak ripeness before undergoing careful washing and patio drying.

Continuous improvement is a core philosophy at Santo Tomas Perdido. In recent years, Javier has introduced additional sorting stages throughout the wet mill, allowing only the highest-quality parchment to continue through processing. Beyond coffee production, the farm also generates renewable hydroelectric power, reducing its environmental impact while making thoughtful use of the abundant natural resources surrounding Lake Atitlán.

The result is a coffee that reflects both careful stewardship of the land and a commitment to producing consistently exceptional quality year after year.
