This coffee comes from smallholder farmers throughout the department of Quindío, one of the most celebrated coffee-growing regions in Colombia. About the Bean
This fully washed lot undergoes a natural decaffeination process in Colombia using high-mountain spring water and naturally derived Ethyl Acetate (EA). The EA used in the process is produced from sugarcane, making it a naturally sourced solvent that selectively removes caffeine while preserving much of the coffee's original character.
Unlike harsher decaffeination methods that rely on high heat or pressure, the water-EA process gently extracts caffeine while maintaining the bean's natural structure and flavor compounds. Only spring water and sugarcane-derived EA come into contact with the coffee during decaffeination, helping preserve the sweetness and complexity of the original lot.
The result is a smooth, approachable decaf with a moderate body and balanced acidity. In the cup, expect comforting notes of milk chocolate and caramel, complemented by subtle undertones of orange. The profile is rich, sweet, and satisfying, delivering a classic Colombian coffee experience without the caffeine.
