About the Farm
Valle del Cauca is a lush coffee-growing corridor in western Colombia, surrounded by the Tatamá National Park and the Serranía de los Paraguas, a UNESCO World Heritage landscape. This area is one of Colombia’s most important biological conservation zones, where producers focus not only on coffee but also on protecting water sources, biodiversity, and forest ecosystems.
Farmers here are smallholders working small family plots. Their farms benefit from fertile volcanic soils and a consistent microclimate shaped by the surrounding mountains. Many practice agroecology and environmentally friendly methods, integrating conservation with coffee cultivation. By supporting this decaf lot, you’re also supporting farmers who are stewards of one of Colombia’s most critical ecological regions.
About the Bean
This lot starts as a washed coffee, which highlights the clean and bright qualities Colombian coffees are known for. After harvest, cherries are pulped, fermented, washed, and dried under careful supervision before being prepared for decaffeination.
The decaf step uses the sugarcane EA (ethyl acetate) method, a process unique to Colombia. Ethyl acetate is naturally derived from sugarcane, and when combined with water and steam, it gently removes caffeine without stripping flavor. The process is highly effective, removing up to 97% of caffeine while preserving sweetness, fruit notes, and complexity in the cup.
The result is a decaf that doesn’t taste like one. Expect a smooth profile with rich chocolate, cane sugar sweetness, lively citrus brightness, and subtle roasted almond notes, carried on a medium body with a refreshing, bright acidity.
