About the Farm

El Viejo Caldas refers to the historic coffee-growing zone that encompasses the departments of Caldas, Quindío, and Risaralda, located in Colombia’s central Andes. These lands are part of the UNESCO-recognized “Coffee Cultural Landscape,” where generations of smallholder families have built their livelihoods around coffee cultivation. At elevations of 1,800 to 2,100 meters, the combination of rich volcanic soil, steady rainfall, and temperate climate create excellent conditions for specialty-grade Arabica.

Over half a million Colombian families depend on coffee, and in Viejo Caldas, farming remains highly traditional and community-centered. Most producers work on small plots of a few hectares, carefully handpicking ripe cherries before delivering them for processing. This collective effort ensures consistency and quality, while also preserving Colombia’s global reputation for balance, sweetness, and clean flavor profiles.

About the Bean

This lot has been decaffeinated in Colombia using the EA (Ethyl Acetate) process, sometimes called the “sugarcane process” since EA is derived from fermented sugarcane molasses. It is considered one of the gentlest decaf methods because it removes up to 97% of the caffeine while preserving the bean’s natural flavor compounds. The process involves steaming the beans, soaking them in an EA solution to bind and extract caffeine, then carefully drying and stabilizing the beans for export.

The result is a decaf that retains much of the sweetness and complexity that Colombian coffees are known for. In the cup, you can expect light body and medium acidity, with a profile that leans fruity, nutty, and chocolaty. Gentle hints of dried fruit and roasted nuts are layered with cocoa-like richness, creating a smooth, balanced brew without the caffeine.
