About the Farm
Finca Voo sits high in Copey de Dota, a prized section of the Los Santos Zone, home to some of Costa Rica’s most celebrated specialty coffees. The Dota valley’s unique microclimate — cool mornings, crisp nights, steady mountain breezes, and high elevation — creates ideal conditions for slow cherry maturation. This slow growth concentrates sugars and intensifies the aromatic compounds that define exceptional Geisha.
The farm is managed as part of the Café Solís & Cordero family operation. The Solís-Cordero family is based in Santa María de Dota, where they run their micromill with extreme attention to detail. Cherries from Finca Voo are delivered the same day they’re harvested, allowing the family to control every aspect of processing. Lots are separated by farm, variety, and day of harvest, ensuring full traceability and protecting the delicate character of Geisha.
With volcanic soil, high-altitude terroir, and precise micro-lot management, Finca Voo has gained a reputation for producing elegant, floral-driven coffees with clarity and sweetness — especially in honey and natural processes.
About the Bean
This lot is a Black Honey Geisha, the most labor-intensive honey style and a signature of Solís & Cordero’s technical skill. After depulping, the maximum amount of mucilage remains on the seed. Instead of drying under direct sun, the coffee is placed on covered African beds to slow the drying cycle and preserve volatile aromatics.
Drying can last several weeks, during which the coffee is turned constantly to avoid over-fermentation and maintain uniformity. This extended mucilage contact amplifies sweetness and fruit depth while preserving Geisha’s unmistakable floral elegance.
The cup opens with classic Geisha aromatics — jasmine, bergamot, and tropical florals — followed by a structured acidity reminiscent of red apple and citrus blossoms. The black honey process adds layers of honey syrup, peach, and ripe fruit sweetness, complemented by a silky light-to-medium body. As it cools, the flavor becomes increasingly complex and aromatic, with a long, sweet finish that reflects both terroir and processing mastery.
